Why sardines can matter

Gout occurs when urate crystals trigger inflammation in a joint. Purines from foods such as sardines are broken down into uric acid, and the effect varies with overall diet, kidney function, hydration, medicines and individual metabolism. Eating sardines does not prove that a new joint symptom is gout; several conditions can cause pain or swelling.

A gout flare often causes sudden, intense joint pain with warmth, redness or swelling, commonly in a foot, ankle or knee. Chronic Kidney Disease and some medicines can affect urate handling, so tell your clinician about your health history.
