What should you know about slow poison foods?

Short answer
Food poisoning can develop gradually after contaminated food, so monitor symptoms, replace fluids, and seek care for warning signs.
This answers one question. It is not a diagnosis and does not replace an assessment by a licensed doctor.
At a glance
- Common symptoms
- Nausea, vomiting, diarrhoea, abdominal cramps, and fever
- Main risk
- Dehydration when fluids are lost or cannot be kept down
Why symptoms may be delayed
Food poisoning is illness caused by contaminated food or drink. The timing varies because some germs or toxins irritate the gut quickly, while others take time to multiply or trigger inflammation. Early symptoms may include nausea, abdominal cramps, diarrhoea, vomiting, or fever. More than one person who shared a meal may become unwell, but a delayed onset does not by itself prove which food was responsible. Symptoms can also come from a viral illness, medication effect, or another digestive problem.
What to do at home
Take frequent small sips of water or an oral rehydration drink, especially after vomiting or loose stools. Rest, eat light foods when able, and avoid alcohol and foods that worsen nausea. Wash hands with soap and water and avoid preparing food for other people while ill. Keep a note of when symptoms began, recent meals, fever, stool changes, vomiting, and fluid intake. A clinician may recommend testing or IV fluid therapy if dehydration is significant or oral fluids cannot be kept down.
When to seek care
Seek prompt medical advice for blood in stool or vomit, severe or localised abdominal pain, persistent vomiting, signs of dehydration, high fever, or diarrhoea that is worsening or not settling. Get urgent help for confusion, fainting, very little urine, severe weakness, or difficulty breathing. Children, older adults, pregnant people, and those with weakened immunity can become dehydrated more quickly.
Questions for your doctor
Ask how much fluid to take, whether a stool test is needed, which medicines are safe for your symptoms, and when you can return to work, school, or food preparation.

Questions people ask
Can food poisoning start several hours after eating?
Yes. Symptoms may be delayed because different germs and toxins act at different speeds, and timing alone cannot identify the responsible food.
What is the safest drink for diarrhoea?
Small frequent sips of water or an oral rehydration drink can replace lost fluid and salts. Seek advice if vomiting prevents drinking.
