What it can mean

Contamination can occur during production, storage or handling. Some illnesses result from germs multiplying in food; others follow toxins already present in the food. Soft, fresh or unpasteurised cheeses may need particular care with refrigeration and handling. Symptoms can start after eating the cheese, but the timing varies.
